Bagels
Ingredients:
7g sachet dried yeast 2 tbsp sugar 1 tsp salt 450g bread flour (use half plain and half wholemeal) poppy and/or sesame seeds to sprinkle on top (optional) Steps: Tip the yeast and 1 tbsp sugar into a large bowl, and pour over 100ml warm water. Leave for 10 mins until the mixture becomes frothy. Pour 200ml warm water into the bowl, then stir in the salt and half the flour. Keep adding the remaining flour (you may not have to use it all) and mixing with your hands until you have a soft, but not sticky dough. Then knead for 10 mins until the dough feels smooth and elastic. Shape into a ball and put in a clean, lightly oiled bowl. Cover loosely with cling film and leave in a warm place until doubled in size, about 1hr. Heat oven to 220C/fan 200C/gas 7. On a lightly floured surface, divide the dough into 10 pieces, each about 85g. Shape each piece into a flattish ball, then take a wooden spooon and use the handle to make a hole in the middle of each ball. Slip the spoon into the hole, then twirl the bagel around the spoon to make a hole about 3cm wide. Cover the bagel loosely with cling film while you shape the remaining dough. Meanwhile, bring a large pan of water to the boil and tip in the remaining sugar. Slip the bagels into the boiling water - no more than four at a time. Cook for 1-2 mins, turning over in the water until the bagels have puffed slightly and a skin has formed. Remove with a slotted spoon and drain away any excess water. Sprinkle over your choice of topping and place on a baking tray lined with parchment. Bake in the oven for 25 mins until browned and crisp - the bases should sound hollow when tapped. Leave to cool on a wire rack, then serve with your favourite filling. |

Bagels
Ingredientes:
Un sobre de 7gr. de levadura seca de acción rapida 2 cucharadas de azúcar 1 cucharadita de sal 450g harina de fuerza, blanca o integral (o usa mitad y mitad) semillas de amapola y/o sesamo para echar por encima (opcional) Pasos: Pon la levadura y una cucharada de zúcar en un bol grande y echa 100ml. de agua templada. Deja reposar durante 10 minutos hasta que la mezcla este espumosa. Echa 200ml de agua templada en el bol y luego anade la sal y la mitad de la harina. Sigue anadiend la harina que queda (puede ser que no haga falta utilizarla toda) y mezcla con tus manos hasta que consigas una masa suave pero no pegajosa. Amasa durante 10 minutos hasta que la masa se note suave y elástica. Dale forma de bola y ponla en un bol limpio y ligeramente engrasado. Cubre con film transparente y deja en un lugar templado hasta que haya doblado su tamaño (aprox. una hora). Calienta el horno a 220C. En una superficie enharinada, divide la masa en 10 piezas, cada una de unos 85gr. Dales forma de bolas aplanadas y usa el mango de una cuchara de palo para hacer un agujero en el centro de cada una de ellas. Desliza el mango dentro de el agujero y dale vueltas para conseguir un agujero de unos 3 centímetros de ancho. Cubre los bagels con film transparente mientras sigues dando forma al resto de la masa. Mientras, pon a hervir una olla con agua y la otra cucharada de azúcar. Mete los bagels en el agua, no más de cuatro a la vez. Déjalos sumergidos por uno o dos minutos hasta que esten un poco esponjosos y se les haya una formado una 'piel'. Sacalos con la espumadera y quita cualquier exceso de agua. Echa semillas por encima (si las vas a usa) y ponlos sobre una bandeja de horno, cubierta con papel antiadherente. Hornea por 25 minutos hasta que esten dorados y crujientes - las bases deberían sonar a hueco cuando se golpean ligeramente. Deja enfriar en una rejilla de metal y sirve con tu relleno favorito, dulce o salado... queso crema y salmón ahumado, mantequilla y mermelada, ensalda y queso, etc. |
