Sweet - Dulce
'Doughnut' Muffins
Ingredients:
140g golden caster sugar , plus extra for dusting 200g plain flour 1 tsp bicarbonate of soda 100ml natural yogurt 2 large eggs , beaten 1 tsp vanilla extract 140g margarine , melted 12 tsp seedless strawberry (or raspberry) jam Steps: Heat oven to 190ºc. Lightly grease a muffin tin for 12 or place the muffin cases on it Put the sugar, flour and bicarbonate in a bowl and combine. In a jug, whisk together the yogurt, eggs and vanilla and add it to the dry mixture together with the melted margarine. Quickly fold with a metal spoon to combine. Divide two-thirds of the mixture between the muffin holes. Add 1 tsp jam into the centre of each and then cover with the remaining mixture. Bake for about 16 minutes until risen, golden and springy to touch. Leave the muffins to cool for 5 mins and then take out of the tin and roll with extra sugar. |

Muffins 'donuts'
Ingredientes:
140g azúcar, más algo extra para rebozar 200g harina 1 cucharadita de bicarbonato 100ml yogurt natural 2 huevos batidos 1 cucharadita de esencia de vainilla 140g margarina derretida 12 cucharaditas de mermelada de fresa o frambuesa Pasos: Pon el horno a 190ºc y engrasa o pon los papeles de muffin en el molde a usar. Combian el azúcar, la harina y el bicarbonato en un bol grande. Bate los huevos junto con el yogur y la vainilla y añade esto a la mezcla seca junto con la margarina. De manera rápida, mezcla todo con una cuchara de metal. Divide dos tercios de la mezcla entre los doce agujeros o papeles de muffin y pon una cucharadita de mermelada en el centro de cada uno de ellos, cubriendolos posteriormente con el resto de la masa. Hornea durante 16 minute¡os hasta que esten dorados, hayan crecido y esten esponjosos. Dejalos enfriar 5 minutos y despues rebozalos en azúcar. Estos muffins tienen una textura y sabor muy similar a la de los donuts por lo que son una buena alternativa a los mismos, sobre todo porque no hay que freirlos y por lo tanto las calorías se reducen. ;) |
