Easy Veggie Curry
Ingredients:
(serves 4-6) 2 tbsp. olive oil 2 to 4 tbsp. green or red curry paste (try to get a good quality one) 1 big onion 1 can chopped tomatoes 1 big carrot 1 red pepper 200 g. mushrooms 1 small cauliflower and about the same amount of broccoli 1 medium aubergine vegetable stock Steps: Heat the olive oil and cook the curry paste for a minute. Then add the chopped onion and cook for a few more minutes. Add the rest of the vegetables and the chopped tomatoes and cook for 10 minutes. Then add enough vegetable stock to cover the vegetables and shimmer until the vegetables are soft (not too much). Serve with rice. You may add chicken for a meaty version, or Quorn chicken style pieces to keep it veggie but with extra protein. And if you do not have all the vegetables, just substitute them for others, sugar snap peas are great for curries. For a creamier curry add some coconut milk. A good idea is to keep it in individual portions and freeze to have it almost ready whenever you feel like having it. |

Curry de verdurasIngredients:
(4-6 raciones) 2 cucharadas de aceite de oliva 2-4 cucharadas de pasta de curry de buena calidad, verde o rojo 1 cebolla grande 1 lata de tomate triturado 1 zanahoria grande 1 pimiento rojo 200 g. champiñones 1 coliflor pequeña y la misma cantidad de brocoli (si quieres puedes echar una cantidad a tu gusto de coliflor y brócoli congelado) 1 berenjena mediana caldo de verduras Pasos: Calienta el aceite y cocina la pasta de curry durante un minuto. Luego añade la cebolla picada y continua en el fuego unos minutos más. Alade el resto de verduras y el tomate y cocina durante unos 10 minutos. Luego echa caldo de verduras hasta cubrir las verduras y cocina a fuego medio hasta que las verduras esten blandas (no demasiado!). Sírvelo con arroz. Puedes echar pollo (o sustituto de pollo, como Quorn Chicken Pieces) para una versión más completa con proteínas. Si no te gustan algunas de las verduras, sustitúyelas. Para conseguir una textura más cremosa y mas Thai añade un chorro de leche de coco. Es muy cómodo para congelar en porciones individuales y tenerlo listo al llegar a casa en invierno. |
