Veggie Shepherd's Pie
Ingredients:
4 tbsp. olive oil 2 onions, chopped 4 carrots, diced 1 head celery, chopped 4 garlic cloves, finely chopped 200 g. chestnut mushrooms 2 bay leaves 1 tbsp dried thyme 500 g. dry green lentils 100ml red wine 1.7 l. vegetable stock 3 tbsp. tomato paste 2 kg. potatoes 85 g. dairy free margarine 100 ml. soya milk 50 g. cheese, grated (optional) Steps: Place a big sauce pan on the hob, heat the olive oil, fry the onions, carrots, celery and garlic for 15 minutes at low fire until soft and golden. Turn up the heat, add the mushroomsand cook for 4 extra minutes. Add the herbs and the lentils. Pour over the wine and stock and simmer for 40-50 minutes until the lentils are very soft. Season to taste, take off heat, and stir in the tomato paste. While the lentil sauce is cooking, boil the potatoes for about 15 minutes until tender. Drain well, mash with the butter and milk and season with salt and pepper. Divide the lentil mixture between all the dishes that you are using, then top with the mash. Scatter over the grated cheese and bake at 190 ºC for 30 minutes until the top is golden. You may freeze it up, ideally in individual portions and defrost before eating, only having to bake it for 30 minutes as in the last step. For a vegan option, do not use cheese (or use a vegan cheese) and use a dairy free margarine For a lower calorie and fat option, try the lentil mixture on its own, without the mash and cheese. It is delicious too! |

Pastel de lentejas
Ingredientes:
4 cucharadas de aceite de oliva 2 cebollas, picadas 4 zanahorias, en dados 1 cabeza de apio, picada 4 dientes de ajo, picado muy fino 200 g. de champinones 2 hojas de laurel 1 cucharada de tomillo seco 500 gr de lentejas secas 100ml de vino tinto 1.7 litros de caldo de verduras 3 cucharadas de pasta concentrada de tomate 2 kg. de patatas 100 ml. leche de soja 50 g. queso manchego Pasos: Pon al fuego una cacerola grande, caliente el aceite y cocina la cabolla, la zanahoria, el apio y el ajo durante 15 minutos a fuego lento hasta que se ablande todo y se dore. Sube el fuego y añade los champiñones, cocinando por otros 4 minutos. Añade las especias y la lentejas y echan el vino y el caldo por encima. Cocina durante 40-50 minutos hasta que las lentejas esten muy blandas. Salpimenta al tu gusto, retira del fuego y mezcla la pasta de tomate. Mientras las lentejas se estan haciendo, hierve las patatas 15 minutos hasta que estén tiernas. Escúrrelas bien y haz puré junto con la leche y un poco de sal y pimienta. Divide la mezcla de lentejas entre los diferentes platos y cubre por encima con el pure de patata. Echa el queso, rallado, por encima y gratina a 190 ºC durante 30 minutes hasta que se dore. Puedes hacer porciones individuales y congelarlas, se mantendrán por dos meses. Sólo deja el último paso del horno para despues de descongelarlas. Para una versión más light, las lentejas sin el pure y el queso también están muy ricas :) |
