Cardamom Veggie Rice
Ingredients:
1 tbsp olive oil 1 medium onion 1 green pepper 2 medium carrots 1 medium leek 3 cardamom pods freshly ground black pepper 1 tsp paprika 1-2 tomatoes 1 small cup wholegrain rice Steps: Heat the oli in a pan at a medium fire. Chop the vegetables and add them to the pan so that they soften a bit. Add a bit of salt to help them enhance flavour and soften easily. They will need about 5 minutes, not too soft as they will be cooked further later with the rice. Add the cardamom seeds and blend the tomatoes with an electric blender. Add to the pan too. Then add the rice, cook for 2 minutes and add three cups of water (the same size as the rice cup). Add the paprika, mix well and bring to the boil. Keep the fire a bit lower and leave to cook for about 30 minutes until the rice is properly cooked, adding a bit more water if necessary. If you use white rice it will take less time but it will not have as much flavour. Once everything is done, add black pepper to taste and enjoy! |

Arroz con verduras al cardamomoIngredientes:
1 cucharadita de aceite de oliva 1 cebolla 1 pimiento verde 2 zanahorias medianas 1 puerro no muy grande 3 vainas de cardamomo pimienta negra molida 1 cucharadita de pimentón dulce 1-2 tomates (depende del tamaño) 1 taza de arroz integral Pasos: Echamos el aceite a una sartén y lo calentamos a fuego medio. Picamos la cebolla, las zanahorias, el pimiento y el puerro en dados y lo vamos añadiendo al aceite para que vaya cocinándose con una pizca de sal para que se pongan tiernos antes y se potencie el sabor. Necesitarás unos 5 minutos, ten en cuenta que luego se ablandarán durante la cocción del arroz. Añadimos las semillas del cardamomo y mientras trituramos los tomates con la batidora. Añadimos el tomate triturado, mexclamos bien y añadimos la taza de arroz. Removemos durante 1-2 minutos y a continuación echamos 3 tazas de agua (la misma que la de arroz). Añadimos el pimentón, mezclamos y dejamos que hierba. Luego bajamos un poco el fuego y dejamos durante media hora hasta que el arroz esté hecho (si se usa arroz blanco en vez de integral, tardará menos en cocerse, pero no tendrá tanto sabor). Su fuera necesario, se puede añadir más agua según vayamos viendo. Una vez esté hecho, añade pimienta al gusto y ¡a comer! |
