Peanut Butter Cookies
Ingredients:
1 cup peanut butter 6 tbsp. margarine 3/4 cup caster sugar 1 tsp. vanilla extract 1 large egg 1 1/2 cups wholemeal flour 3/4 tsp bicarbonate of soda 1/2 tsp of each baking powder and salt 1 cup dark chocolate chips Steps: Mix the penut butter, margarine and sugar (with an electric mixer if you have one) until the mixture is fluffy. Stir in the vanilla extract and egg. Add all the dry ingredients and mix until you get an even dought (it would be a bit crum-like and sticky (see pictures below). Add the chocolate chips, cover the bowl with cling film and chill for at least two hours. Preheat oven to 200 ºC and line the base of a baking tray with baking parchment. Make small balls with the dough and place on the prepared tray leaving space between them as they will grow quite a lot in the oven (you will need to bake them in a few batches). Cook each batch for about 10-12 minutes until they look properly cooked and a bit golden (watch that the bottom of the cookies do not get burnt!). Once out of the oven, place them on a wire rack to cool down. Keep them in a tin or tray and enjoy! |
