Russian Salad
Ingredients:
(serves 4-6) 1 can garden peas 2 cans of tuna (about 180grs) 1 roasted red pepper 3 big carrots 20-28 olives (I like anchovy filled olives), finely chopped 30 small gherkins 4 eggs 6 potatos, medium sized Steps: Boil the eggs, carrots and potatoes without leaving them too soft. If the potatoes are not new, remove the skins. Dice it all and place in a big bowl. Chop the olives, gherkins and pepper and add it to the bowl. Then add the tuna and peas. Season with extra virgin olive oil and salt to taste (I find it does not need any salt since it has got lots of flavour from the ingredients). Mix well and, once everything is cool (place in the fridge for a while before eating in summer), serve. This can make a perfect starter or a main dish, depending on th amount you have. Also idela for picnics and tapas dinners. If you do not have pepper or do not want to roast it you may use it from a jar. And you can use frozen peas, boiled for a few minutes, if you do not have a can. This is my version of Russian Salad: without mayo. I like it more like this and it is also healthier, but if you love mayo, go ahead and add some to yours. I hope you like it, great in summer! |

Ensaladilla rusa
Ingredientes:
1 lata de guisantes 2 latas de atún 1 pimiento rojo asado 3 zanahorias grandes 20-28 aceitunas rellenas de anchoa, picadas 30 pepinillos pequeños en vinagre (no agridulces) 4 huevos 6 patatas, dependiendo del tamaño Pasos: Hierve los huevos, las zanahorias y las patatas, sin dejar las zanahorias y las patatas demasiado blandas. Quita la piel de las patatas, a no ser que sean de piel fina. Luego cortalo todo en dados. Échalo todo en un bol grande. Pica las aceitunas, los peinillos y el pimiento y añadelo al bol. Por último, abre las latas de atún y guisantes y añadelas también. Aliña con aceite de oliva virgen extra y sal al gusto (yo no suelo echarle sal porque ya tiene mucho sabor), mezcla bien y una vez que se haya enfriado (en verano, puedes meterla a la nevera), sírvela. Puede ser un entrante perfecto, o un plato único, según la cantidad. También ideal para picnics y cenas de picoteo. Si no tienes pimiento o no te apetece asarlo, utiliza pimiento morrón de lata. Y si no tienes guisantes en lata, puedes hervir un puñado de guisantes congelados. Esta es mi versión de la ensaladilla; sin mayonesa. A mi me gusta más y además es más sana. Pero por supuesto quién quiere añadirle mayonesa en vez de aceite, puede hacerlo. Espero que os guste. ¡En verano sienta genial! |
