Spanish Omelette
Ingredients:
900gr. - 1Kg. potatos, peeled and finely sliced 9-10 medium eggs, beaten 1 big cooking onion, peeled and finely chopped extra virgin olive oil salt Steps: First, peel and slice the potatos and chop the onion. There are two different ways of making a tortilla: the traditional one and the lighter and cheaper one. For the first traditional way, put a non-stick frying pan on the hob at low fire. Fill it with olive oil, enough to cover the potatoes (bear in mind that as the potatoes get cooked they will reduce their size a little bit) and wait until it is hot. Then add the potatoes and fry for about 15 minutes. You do not want them to be chip-like but kind of boiled in oil. When the potatoes are soft, add the chopped onion and cook for about 5 extra minutes. Meanwhile, beat the eggs in a big bowl and add a good pinch of salt (add more or less according to taste). Both the potatoes and onion should be soft now. Turn off the fire and set a sieve on top a medium bowl. With the help of a slotted spoon remove the potatoes and onion from the pan onto the sieve, allowing them to drain the oil into the bowl. Mix the potatoes and onion with the eggs, previously beaten. Remove all excess of oil from the pan, keeping it in the bowl with the rest of oil. Use the sieve again to avoid any rests of food falling into the bowl. The pan should just be greased so to not allow the omelette to get sticked. If we are making the tortilla the lighter way, we will steam the potatoes and onions (for the last 2-3 minutes) instead of frying them. When they get soft we will mis them with the beaten eggs. In this case we will need to add a couple of tbsps of olive oil to the pan we are going to use so that the tortilla doesn´t get stuck. Now with the pan at medium-high fire, add the egg, potatoes and onion mixture and cooked until you see the bottom of the omelette is set and golden and the top not too juicy. At this stage, place a plate upside down on top of the omelette (check that it has a size similar to the pan's)and turn it over. You may be scared of dropping it if this is the first time you do it, but go ahead and do it, there's always a first time, and it is actually easier than it seems to be. Now put the half-coked omelette back to the pan, uncooked side at the bottom, use the slotted spoon to help you. Now cooked for a further 5 minutes approximately, until the omelette is totally set and golden. It does not matter if the result is juicy in the middle, some find it delicious. Pass the omelette onto a plate and enjoy! It would be delicious both warm and cold. Ideally serve with a fresh salad, roasted red peppers or fried green peppers. |

Tortilla de patata
Ingredientes:
900gr. - 1Kg. patatas, peladas y cortadas en rodajas finas 9-10 huevos medianos, batidos 1 cebolla grande, pelada y picada aceite de oliva virgen extra sal Pasos: Pela y corta la patatas en rodajas finas. PIca la cebolla y deja aparte. Para cocinar las patatas y la cebolla tenemos dos opciones: la tradicional y la más ligera y barata. Para hacerlo de la manera tradicional, pon una sartén antiadherente a fuego lento y echa suficiente aceite de oliva para cubrir las patatas, teniendo en cuenta que según se cocinan reducirán su tamaño un poco. Espera a que este caliente. Añade las patatas y fríe (a fuego bajo, que no se tuesten) durante unos 15 minutos hasta que parezcan 'cocidas en aceite'. Cuando esten blandas, añade la cebolla y deja unos 5 minutos más. Mientras, bate los huevos en un bol grande y añade un buen pellizco de sal, a tu gusto. Cuela las patatas y la cebolla para deshacerte del exceso de aceite con ayuda de un colador grande y una espumadera y añadelas en el huevo. Podrás utilizar el aceite en otra ocasión si es de oliva virgen. Quita el exceso de aceite que haya quedado en la sartén y déjalo en un bol con el resto del aceite sobrante, siempre colándolo antes para evitar restos de comida. La sartén debe quedar engrasada para evitar que la tortilla se quede. Si preferimos una opción más ligera y sin gastar tanto aceite, pondremos las patatas a hacerse al vapor, añadiendo la cebolla los tres ultimos minutos. Tiene que quedar blandas. Las añadiremos a los huevos batidos con un poco de sal y mexclaremos bien. En este caso, añadiremos aceite a la sartén que vayamos a utilizar a continuación. Lo suficiente para que no se pegue, unas dos cucharadas bien repartidas por toda la base. Ahora con la sartén a fuego medio-alto, añade la mezcla de huevo, patatas y cebolla y cocina hasta que veas que la base de la tortilla se dora y la parte superior no está demasiado líquida (aunque sí jugosa). En este punto pon un plato de tamaño similar a la sartén boca abajo sobre la tortilla y dala la vuelta. Si es la primera vez que lo haces, no te asustes, es más fácil de lo que parece. Vuelve a poner la tortilla al fuego, del otro lado y cocina por otros 5 minutos aproximadamente hasta que la tortilla esté dorada y con cuerpo. A mi me gusta jugosa en medio pero algunos la prefieren más hecha. Eso va en gustos. Enplátala y come recien hecha o fría, esta buenísima de las dos formas. Sirve con una ensalada :) |
