Banana & Pecan Cake
Ingredients:
200 g. caster sugar 250 g. wholemeal self-raising flour 150 g. pecans 1 tbsp. margarine 2 eggs 2 egg whites 4 really ripen medium bananas 150 ml. sunflower oil 100 ml. unsweetened soya milk 1 tsp. cinnamon 1 tsp. baking powder Steps: Preheat oven to 180 ºC and grease a loose-bottomed cake. For the crumble topping stir together 2 tablespoons each of the sugar, flour and chopped pecans. Then rub together with the butter until you have sticky crums and set aside. Mash the bananas (if they are not ripe enough microwave them for a few seconds to make them softer) and combine with the two whole eggs, oil and milk. In a different bowl mix the remaining sugar, flour and pecans with the cinnamon and baking powder. Whisk the egg whites until just stiff. Tip the oily mixture into the bowl of dry ingredients and quickly stir in until you have a lump-free mix. Finally fold in the egg whites with a spatula or large spoon. Pour the mixture into the tin, scatter over the crumble and bake for 1 hour, until a skewer stuck in to the middle comes out clean. If you check and find the surface browning too quickly cover with a piece of baking parchment or foil. Leave to cool. This cake is rich and nutritious and the banana keeps it moistured for many days, having a crunchy crumble topping as contrast. Yummy with a glass of milk or a tea. |

Bizcocho de plátano y pecans
Ingredientes:
200 g. azúcar 250 g. harina de bizcocho integral 150 g. nueces 1 cucharada de margarina 2 huevos 2 claras de huevo 4 plátanos medianos muy maduros 150 ml. aceite de girasol 100 ml. leche de soja 1 cucharadita de canela 1 cucharadita de levadura Pasos: Calienta el horno a180 ºC y engrasa un molde de lata. Prepara el topping con 2 cucharadas de azúcar, 2 de harina y 2 de nueces picadas. Con las manos mézclalo con la mantequilla hasta formar migas pegadizas. Aparte, machaca los plátanos hasta hacerlos puré (mételos unos segundos en el microondas si hace falta abalndarlos) y combina con los dos huevos, el aceite y la leche. En otro bol mezcla el resto de azúcar, nueces y harina con la canela y la levadura. Bate las claras hasta punto de nieve. Une la mezcla húmeda con la seca y remueve rápidamente hasta deshacer cualquier grumo. Por último incorpora las claras con una espátula o cuchara grande. Echa la mézcla en el molde y esparce el topping por encima. Hornea durante una hora, comprobando que el interior esté hecho con un pincho antes de sacarlo del horno. Deja enfriar. Este bizcocho es rico y nutritivo y se mantiene sin secarse por muchos días gracias al plátano. El contraste con el topping crujiente es genial. Mejor con un té,café o vaso de leche ;) |
