I woke up feeling a bit down today so I though... why not making something relaxing that keeps me focused so that I forget about not-so-nice things happening in my life at the moment? There you go! These muffins were the key...
I had been wanting to make some gingery sweet recipe for a while now, and I had a bit too many pears in my fridge so I started my search for anything that could have pears and ginger in it and sounded deliciously sweet but fresh and fruity at the time.
I came across some recipes here and there but most of them had either butter or buttermilk in the batter so I created a recipe of my own, using my usual ingredients :)
I made this muffins with no dairy, no nuts, and not much sugar, just the right amount. I was a bit concern that they might turn out a bit bland at the beginning, but nothing close to that; they have lots of flavour and my family have loved them.
So, if you need something to go with your hot drink in a cold afternoon, come on and make them!
I have served them with a thin layer of Wilkin and Sons' Rhubarb & Ginger Conserve (one of the treats I always bring from London) on top and a tiny bit of sugar just to decorate and it worked really nicely.

And... I just aimed to get about 12 muffins, and I did but... I still had enough batter to make another 12, so feel free to half the amounts if it is too much for you.
